Mexicali Blues Bowl

Here’s a little variation you can try on Taco Tuesday! It’s like a potato based taco bowl. It has lots of flavors that all come together to create a fiesta in your mouth! 💃


2lbs potatoes

1/4 c avocado oil

1/8 c gluten free flour (or regular if not gf)

1/4 c corn starch

1 tsp paprika

1 tsp salt

1/4 tsp black pepper

1/4 tsp cheyenne pepper

Boil potatoes for 20 minutes. Cut into 1 inch cubes. Toss in the oil. Mix the flour, cornstarch, and spices. Toss potatoes in the mixture and bake at 425 for 20 minutes

Next add whatever you want to your potato bowls!

👩‍🍳I chose the following:

1 c cooked quinoa

1 c arugula

1 lb ground turkey seasoned with taco seasoning

1 can chickpeas, roasted in salt & oil

Guacamole made from 2 avocados

Sour cream

Shredded cheddar

You can go as simple as eating the potatoes with a dollop of sour cream or you can go CRAZY with it! Please share your creations with me, I would love to see! And 🤤 drool…
